View Full Version : Resurrection cookies
lmy911 04-06-2009, 07:51 AM I have heard of these cookies before, but never made them. My kids brought home the recipe from Sunday School yesterday and want to try them. I would like to, however, the recipe calls for pecans and my DS5 is allergic to tree nuts. Has anyone ever made the cookies without the pecans? I don't know if they'd have much flavor not using the pecans since the only other ingredients are egg whites, vinegar, salt and sugar. Any ideas?
Jolene 04-06-2009, 08:13 AM Hmmm...made them last year. Can't remember them that much (yikes). Could you maybe put an M&M on them instead? Maybe use the Easter colored ones? Not sure how they would taste, but it might be worth a try.
lmy911 04-06-2009, 08:15 AM The pecans are supposed to be crushed and folded into the mixture, so I'm not sure how an M&M would work. These cookies end up being hollow inside when you are done. They have to stay in the oven overnight. There's a lesson that goes with them.

I'm not sure, maybe there is something else you could crush up instead, like graham crackers or vanilla wafers. I think they would turn out without the nuts, but the crushing is part of the story. :huh: I'm not sure. Maybe you could have them crush something to make the point, and just not put them into the cookies.

Good ideas, myhappyhome. I will definately NOT eliminate the "crushing" part of the story and will try to find something else. He's not allergic to peanuts, so maybe I could use those instead.

lmy911 04-13-2009, 07:47 AM OK, so we made these cookies Saturday night. My kids were not as "into" it as I would've liked, but I think they got the point of the "lesson". Maybe they were a little young this year or just too tired when we did it. I had to use peanuts instead of pecans since my DS5 is allergic, and I'm not sure if they affected the outcome of the cookies or not. They weren't as hollow as I thought they would be and nobody cared for the taste of them. Maybe they are not meant to be eaten, but just tasted. :huh: I'm not sure, but I ended up throwing them all out at the end of the day yesterday. Anybody else have any experience with these cookies?
myhappyhome 04-13-2009, 08:05 PM Leah, I had intended to make these Saturday night. But, I totally forgot until after I tucked them into bed at 8:30. I thought about getting them back up to make them :yikes: (I don't think very clearly when I'm tired) but decided we will just have to try it next year.
Sorry yours didn't turn out that great. I'm not really sure how they are supposed to taste, only that they are supposed to be hollow the next morning. I'll have to ask around at church and see if anyone did them.
