Homemade Beans
Kidney Beans
1 onion
pkg. of bacon
molasses
brown sugar
a "glob" of margarine
salt and pepper to taste
So this is a recipe you do by taste .. so there are no real set amounts for each ingredient. Because it is an all day thing I like making a lot at once (I but two bags of beans) then I just freeze a lot of it.
Place your beans in cold water to soak overnight .. the beans will about double in size so make sure you've got enough water. The next morning drain your beans and cook on the stove (with water just covering the top of your beans) until tender, about an 1- 1 1/2 hours. (I personally put the beans in a roaster to cook them so I have enough room).
Once your beans are tender add your molasses, brown sugar, margarine, a whole onion (don't cut up, just take off the skin), as much bacon as you want in there (I use almost a whole package) and your salt and pepper.
Cook in your oven at 350 for the day/until your beans are fully done. Throughout the day you need to check and make sure that the beans are just barely covered with water. You also need to check the taste and add ingredients as you need. Its all about your taste and what you want.
It does take time to make these but they are sooo worth it!! If you do find that the juices are too runny at the end of the day .. just add a lil flour like your making a gravy to thicken it to your liking. Once the beans cool and are in the fridge you'll find the sauce thickens some as well.
