Homemade Beans

Kidney Beans
1 onion
pkg. of bacon
molasses
brown sugar
a "glob" of margarine
salt and pepper to taste

So this is a recipe you do by taste .. so there are no real set amounts for each ingredient. Because it is an all day thing I like making a lot at once (I but two bags of beans) then I just freeze a lot of it.

Place your beans in cold water to soak overnight .. the beans will about double in size so make sure you've got enough water. The next morning drain your beans and cook on the stove (with water just covering the top of your beans) until tender, about an 1- 1 1/2 hours. (I personally put the beans in a roaster to cook them so I have enough room).

Once your beans are tender add your molasses, brown sugar, margarine, a whole onion (don't cut up, just take off the skin), as much bacon as you want in there (I use almost a whole package) and your salt and pepper.

Cook in your oven at 350 for the day/until your beans are fully done. Throughout the day you need to check and make sure that the beans are just barely covered with water. You also need to check the taste and add ingredients as you need. Its all about your taste and what you want.

It does take time to make these but they are sooo worth it!! If you do find that the juices are too runny at the end of the day .. just add a lil flour like your making a gravy to thicken it to your liking. Once the beans cool and are in the fridge you'll find the sauce thickens some as well.

Do you guys eat beef bacon? You could probably make it with beef bacon too. Just a thought.

No I haven't MM .. you could try it though. When I'm done cooking I take out all the large chunks of bacon and of course the onion. Is someone allergic to it? If so then I definetely wouldn't use it .. if not you could try cooking with it and then take it all out .. would time consuming and you most likely wouldn't every piece though

This is an awesome recipe though! You'll love beans and never buy the canned ones again!

I've never heard of beef bacon! Where would I find that?

We don't eat pork bacon because we don't think we should eat pork. Also, we were eating turkey bacon for a while, but then realized some of the preservatives they put in it can cause cancer so we cut that out as well.

I've hear that some people put liquid smoke in recipes that call for bacon to give it a slight bacon flavor. Maybe I should look into buying some of that.

We have a butcher/meat packaging company very close by to us and they sell beef bacon. It is wonderful...almost tastes like steak!! We actually prefer beef to pork so I buy it more often. Do you have anything like that around where you live? You could even check with someone who raises beef and ask them about having some of the beef made into bacon.

I grew up not eating pork, so I have had stuff made with beef that is normally made with pork (bacon, sausage, hot dogs).

We do have a butcher in the town next to us. I will have to stop by there sometime. Also, my Amish friend's FIL is a butcher. I could always ask him. Whenever we've gotten a part of a cow, we always just get the basic cut because it is the cheapest, but if we buy part of a cow this year, I will ask about the beef bacon for sure.

You could always make vegetarian beans and omit the bacon altogether. :) I do this with my recipe when I don't have bacon in the house.

Ya you could .. I woud imagine it would taste different but still good:thumbs:
